Ripe bananas seem to be my favorite thing these days. This is my 3rd banana dessert post. Now again to make it healthy have used wholewheat with no butter. ?
It feels so good to gulp down goodies knowing you can have some at lunch and dinner when it’s this healthy. And the chocolate chips on top looks just so cute☺☺. Try them and share your results with me. Just healthy, fit & yum.
1 Cup wholewheat flour
3/4 cup sugar/ brown sugar granulated
1 banana mashed
1 tbsp vanilla essence
1/2 tsp baking powder
6 tbsp oil/olive oil
A pinch of salt
1/2 cup chocolate chips+ more for sprinkling on top
Sift together flour, salt and baking powder. Mix well with fork.
Now in another bowl wisk egg and sugar until fluffy (about 2-3min). Now add vanilla essence, oil and mashed banana. Whisk until combined.
Now mix the wet ingredients with dry ones using a wooden spoon. Now fold in the chocolate chips. You can add 1-2 tsp of milk if the batter consistency needs to be adjusted.
Oil a muffin tray. Scoop the batter in the tray, each half filled. If you want bigger muffings fill 3/4 or more. Now top with more chocolate chips. Pess them down gently.
Bake at 180°C for 20 min. Keep an eye after 16 mins, if they start to be extra brown remove them.
Enjoy hot or at room temperature.
You can use more than 1 banana for extra banana flavor.
This recipe makes 6 medium size muffins.
You can use nuts instead of chocolate chips.
