This colorful looking breakfast is a dream for any kid. And as a mom I aim at this breakfast every once in a while.
Beetroot paratha is one such effort!!
Its bright, colorful and tasty. I am served the paratha with coriander chutney and Mango lemonade (I preserved mango puree in freezer so enjoying it).

Directions to make Beetroot Paratha-
Easy nutritious paratha made with beetroot and served with mango lemonade.
- 2 cup wheat flour atta
- 1 cup grated boiled beetroot or beetroot pureed
- 1 small onion finely chopped
- Salt as per taste
- Pepper as per taste
- 1-2 tbsp oil to knead the dough
- 1/2 tbsp amchur or anardana
In a bowl add all the ingredients except oil and knead in to a soft dough.
If the dough is hard the paratha will turn out hard.
Oil your hands and knead again till the dough is soft.
On a hot tawa or skillet cook the paratha on both sides. I have applied very little ghee on both sides and cooked it through ad per my liking.
We served this with coriander chutney and mango lemonade.
Enjoy in breakfast or brunch.
