This cardamom and cinnamon spiced carrot cake is melt in your mouth kinda cake. And I assure you that you cannot stop eating at just one slice. The warm cardamom and cinnamon flavors are so warm and comforting in this monsoon whether. Well I have officially made this cake slice and a cup of green tea my breakfast.
The outer crust is brown and crispy and the inside texture is soft and crumbly. The carrot in the cake give natural sweetness and color. Delicious as it is you could also top it with any icing. Its a perfect cake for potlunches or poke cake recipes.

1 cup Flour(atta or maida)
1/2 tsp salt
1 tsp baking powder
3/4 cup granulated sugar
1 tsp cardamom powder
3/4 tsp Cinnamon powder
1/4 cup olive oil or any oil
1/4 cup milk
1 egg or 1/2 cup curd for eggless
1 cup grated carrot
In a bowl sift flour, salt, baking powder, cardamom and cinnamon. Mix and keep aside.
In another bowl whisk together egg and sugar or curd and sugar for eggles version.
Once mixed add oil & milk and mix until smooth.
Now add the flour mix. Mix to a uniform cake batter. Now fold the carrot.
Pour in a loaf pan.
Top with nuts of your choice.
Bake at 180C for 30 min. Insert a toothpic in the middle to check.
Remove from the tin after 5 min on a wire rack and cool completely before slicing.
