Chickpea Salad is made from boiled chole or chickpea.
Chickpea / chole are a great source of protein for vegetarians. One of the recipes that I like to make with chole is hummus. I had boiled chickpea for the hummus but could not make it. So decided to make a quick snack of it. You can see my Garlic Hummus with smoked paprika here⤵
It’s light, refreshing and filling. I have used mayonnaise since I had no hung curd or Greek yogurt; But you can use yogurt for a more healthier option.
Enjoy it with a glass of fresh mint lemonade. Just yum!!
Directions to make Chickpea Salad-
1 cup chickpeas boiled
1 cup veggie(finely chopped onion, tomatoes, red & yellow bell pepper, carrots, cucumber)
1/4 cup shredded lettuce
1 tbsp finely chopped fresh coriander leaves
2 tbsp mayonnaise
Salt and pepper to taste
Mix all the ingredients. Check for seasoning.
Serve and enjoy!!
You can also prepare and keep it refrigerated until required.
