Diet Aloo Gobi Ki Sabji| Potato & Cauliflower Veg

Diet Aloo Gobi ki sabji or potato and cauliflower veg is the Indian favorite. All have different ways to cook it. Today I am sharing with you an easy and yet healthy way to make aloo gobi which is made in just 2 tbsp mustard oil. Even then there is no compromise in taste. Its usually hard to break habit of making our fav sabji a certain way; but believe me change is good.

You can have a big bowl of sabji with curd and salad and it could be a complete meal.

This sabji I like to call diet sabji because its basically boiling everything together. One interesting thing here I would like to tell you is that I have made my sabji in mustard oil. It completely optional but I feel it lends to the taste.

Ingredients:

600 gm cauliflower floret/ Gobi

2 medium aloo/ Potato

1 large onion roughly chopped

1 large tomato roughly chopped

1 tsp ginger garlic paste/ or finely chopped/ or grated

1 tsp cumin seeds/ jeera

Salt as per taste

Red chili powder as per taste/ or green chili if you like

1/2 tsp turmeric powder

Black pepper as per taste(optional)

2 tbsp mustard oil

1/2 tsp hing/ asafoetida

Method:

Chop the potato’s in big chunks.

If the gobi florets are small no need to chop, if too big cut in half.

Wash aloo and gobi and keep aside.

In a pressure cooker add the mustard oil and let it burn.

Now add cumin seeds and hing.

Now add onions and cook till soft.

Add the aloo and gobi. Saute for about a min.

Add tomatoes and add all the masala.

Pressure cook till on whistle and simmer for max 2 mins.

Serve with roti and salad.
