Orange Cake With Chocolate Whipped Cream Icing

I know I am a day late for posting this Valentine’s day treat. Hope this post justifies it.

“Orange flavored cake” with chocolate whipped cream icing and shards of orange chocolate. It’s Egg less, butter less, wholewheat. What more can you want.

Super moist, yummilicious & healthy too??. This was a surprise for my hubby and toddler for this Valentine.❤❤

Ingredients for cake:

1 &1/4 cup wholewheat flour
3/4 cup sugar
1/2 tsp baking soda
1 tsp baking powder
1 cup thick curd
1/2tsp salt
1/2 cup oil
1/2 tsp vanilla essence
1 tsp orange essence
Few drops orange color

Method:

Cream together sugar and curd until sugar dissolves. Add essence and oil.

Sift the dry ingredients. Mix in with wet ingredients until lumpfree.

Bake at 180°C for 35-40 mins.

Orange Cake Eggless

Let it cool.

Ingredients for icing:

1/2 cup whipped cream
2 heaps tbsp unsweetned cocoa powder
2 tbsp icing sugar
1 tsp vanilla essence

Method:

Use the whipping attachment of blender and whip all the ingredients together till firm peaks. It can take anywhere between 7-10 mins.

Make sure your cream, attachments and bowl are refrigerated at least 30 mins before you start.

For final assembly:

Slice the cake in half. Brush with orange juice or sugar syrup so that the layers remain moist. Now spread a dollop of cream evenly all around till the edges of the one half of cake.

Top it with the other half. Now use the remaining cream to cover the top and sides of the cake. Top with grated orange flavored chocolate.

Refrigerate for 30 min at least before serving.
