Sooji Aloo Ka Chilla, Semolina & Potato Pancake

Sooji Aloo ka Chilla is a very easy recipe and a very forgiving one.

You can really amp it up to any direction you like. I have used a basic mashed potato and added suji, some onions, chillies and curd. A smooth batter gives you that. Wow.

It’s melt in the mouth goodness. I am not good with going heavy on spices for the breakfast; only salt and pepper for me. It ideal for babies who have started eating(minus chilli). My son loves this since he was 11 months old. And ofcourse its a wonderful tiffin snack.

Just make sure if you are packing it for tiffins- place a butter paper between two chila’s so it doesn’t stick together and break as it’s so soft.

Take a standard measuring cup or any katori and do all the measurment with that. I had used a standard katori for my chilla and got around 7-8 chila’s as in picture. Let’s quickly begin.

Directions to make Sooji Aloo Ka Chilla-

Serves 4

Ingredients:

1 cup suji/semolina
2 medium large potato mashed (I left chunks for texture)
3/4 cup curd with its water
1/2 cup finely chopped onions, green chilli and coriander *leave chilli for kids
Salt and pepper to taste
3/4 cup water

Method:

Mix all the above ingredients to make a smooth batter. It should be of pouring consistency but not watery.

Leave it aside for 10-15 mins.

Heat oil on a non stick pan. Pour about 4 tbsp of batter. If the batter starts to scatter push it back with the back of the spoon.

Let it cook till sides are brown. Flip and cook till done. You can add more oil on sides if required.

Repeat the same process for the rest of the batter. Serve with coriander chutney and enjoy.

CBC Drink

This drink is an extended version of the very famous ABC aka apple, beetroot & carrot drink.

My initial thought was to make ABC but ended up making CBC(pun intended). So the first ‘A’ was replaced by ‘C’ which would be cucumber. I was kind of surprised to the level of freshness it gave the whole drink. Yummy and so healthy.

So basically it has cucumber, beetroot and carrot and some more. It’s a perfect boost of energy without adding calories into it.

Ingredients:

1 medium size beetroot peeled and roughly chopped
1 large cucumber skin on and roughly chopped
2 medium carrots peeled and roughly chopped
1 large tomato roughly chopped
Salt to taste(optional)

Method:

Blend everything together.

Seive the liquid but don’t discard the flesh. Next recipe coming up is of that.?

Pour in the glasses and serve.

Make sure to pick the best quality veg as this drink gets it’s taste from the sweetness of the veg and nothing additional.

WholeWheat Oats Chocolate Chip Cookies

Healthy & tasty oats Chocolate Chip Cookies are one of my favourite bakes.

Oats are high in dietary fibre and it’s one of my favourite ingredients to bake with too.

Eating mundane masala oats or overnight oats or oats Porridge can be boring. Enjoy this sweet treat with benefit of Wholewheat & oats.

Directions To Make Wholewheat Oats Chocolate Chip Cookies-

Ingredients:

1/2 cup Salted Butter
1/2 cup olive oil
1 cup  Whole Wheat flour
1&1/2 cup Oats
1 cup granulated sugar
1/4 cup Chocolate Chips
2tsp vanilla essence
1tsp baking powder
1egg

Method:

Whisk together butter and sugar till fluffy. Add in olive oil and whisk again.

Add egg, vanilla essence and baking powder. Whisk until combined.

Add the flour. Mix with a wooden spoon. Fold in the chocolate chips.

Now lastly add oats and mix well.

This will be a thick dough.

Make small ball and pressbthem to shape a cookie and place them on a lined baking tray. Bake at 170°C for 15 mins.

Mango Masala Delight, Cooked Ripe Mango & Mint Drink

Its the mango season; what happens when you bring mangoes and they do not turn out as sweet as you expected and now no one is eating them.

Mango Masala Delight

Make this ripe mango masala delight to beat the heat and still enjoy your mangoes.

This recipe is fairly simple to make but looks like a lot of effort. If you gather the ingredients it can be made in advance to enjoy later. I also like making mango lemonade a lot.

Mango drink for summer

Directions To Make Mango Masala delight-

Ingredients:

MAKES 4 GLASSES

2 ripe medium size alphanso mangoes peeled
10-15 mint leaves crushed
Sugar as per taste
Black salt as per taste
1 tsp Crushed roasted jeera
1/4 tsp Crushed black peppercorns
Ice as needed
Soda or water as needed
Lemon wedge & mint leaves for garnishing

Method:

Take out the pulp of mangoes. Pressure cook the mangoes for 1 whistle.

Add sugar, salt, jeera powder, peppercorns and crushed mint.

Cook everything for about 3 mins. Cool and mash roughly with a spoon.

Now you can store this for further use also(max 2 days).

For final assembly salt the rim of a tall glass. Pour 2-3 tbsp of the mango mix. Top with soda/water and ice. Garnish with lemon wedge and mint leaves.

Oats ChocoChip Cookies

First cookie recipe that I made for my blog had to be healthy. I made these yummy oats and Chico chip cookies which am in love with. Be it crunch or soft but has to be buttery ; ah!!!

But recently my focus has shifted to healthy bakes and I also need something to feed my toddler. And guess what he loved them. Its a great snack for kids, have it with a glass of milk and its so filling.

Best part I have used malai for these as I was out of butter. Wholewheat flour makes them a little dense and the brown sugar adds a nice nutty aroma to the cookies. These came out so soft in centre with a crunchy outside. These measurements made 12 medium size cookies.

Directions to make Oats ChocoChip Cookies-

Ingredients:

1 cup Malai/fresh cream
3/4 cup  Whole Wheat flour
1&1/2 cup Oats
1 cup brown sugar
1/4 cup Chocolate Chips
1/2 tsp salt
2tsp vanilla essence
1tsp baking powder
1egg

Method:

Cream together malai & sugar until fluffy.

Add egg and whisk until combined.

Add vanilla essence, baking powder& salt. Mix.

Add flour and mix with a wooden spoon. Fold in the chocolate chips.

Now lastly add the oats. The dough is slightly wet dough.

With clean hands make small round balls and place them 2″ apart on the lined baking tray. Once arranged press the balls down with your fingers or a spoon to flatten as they will spread will baking.

Bake at 170°C for 12 to 15 mins.

As your first batch is baking you can rest your dough in the fridge.
