Pizza Pinwheels | Easy DIY Pizza Roll Ups

These easy DIY pizza pinwheels or roll ups are so easy to make. We like to have it with glass of wine. I am trying to cut back cheese but I so wanted to enjoy this cheese-y goodness so I decided to not top them with more cheese but there is ample amount of cheese inside?
Planning a meal can be fun; you can do so much and make you’d life easy with planning. BUT!! As much planned I am there are times when I end up with not much to cook with.

Ingredients:

For the dough

2 cups flour

1/2 cup fine semolina

1 tsp salt

1 tsp sugar

1 tsp butter or olive oil

3/4 tsp instant yeast

* If you don’t have yeast or don’t wanna use it just add 2-3 tsp of yogurt/ curd.

For filling-

1 large onion

1 small capsicum

2 tbsp Pizza sauce

(For homemade pizza sauce recipe click here)

Pizza cheese as per you like( you can also use processed cheese)

Method:

For the dough mix all ingredients and make a soft dough. Leave it to rest till you make your filling. Around 30 mins.

For the filling saute your veggies til soft whatsver you have; in my case capsicum and onions.

Keep aside to cool.

Meanwhile brush a muffin try with oil. Sprinkle fine semolina (its optional but give crispy exterior).

Make sure you have everything ready – sauce, grated cheese, veggies and plenty to space to work.

Now roll the dough in a rectangle.

Spread the sauce evenly. Leave 1 inch space on all sides because when you roll it will slide to corners.

Now over the sauce sprinkle your veggies. And then cheese.

Time to roll. From one end start rolling as tighgly as you can and when reached the end pinch the ends with your fingers.

Cut 2 inch pieces with a sharp knife.

Place then gently into the muffin cavity.

Rest for 10 mins. Meanwhile preheat the oven at 180°C.

Bake for 20 mins.

Enjoy with some hot ketchup.
