Vegetable Clear soup, Healthy Light Soup Recipe

When it comes to soup I love a good Vegetable clear soup. It’s hearty, it’s wholesome and it’s delicious.

A perfect light dinner time meal for someone like me. If you like a light dinner then this soup with some garlic bread is going to be your favorite.

Imagine all the goodness of soup minus the fuss.

To all those who often ask what is a clear soup?

A clear soup is a soup of boiled vegetables or any meat in any liquid untill its flavors are released. A clear soup does not contain any starch or any flavorings. It’s very good for those on a diet.

Every now and then I crave for some clear soup. Please be advised that this is my version of a clear soup.

So lets get started.

Directions to make Vegetable Clear Soup-

Ingredients-

3 large tomatoes

3 large carrots

2-3 garlic cloves

1 big bunch of fresh coriander (cleaned & sorted)

1 small capsicum

Handful of French beans

1 small onion(use spring onion if you have)

Salt as per taste

Pepper freshly crushed, as per taste

Method-

In a large boiling pot dump tomatoes, carrot, Coriander, garlic, capsicum, french beans.

Add 1.5 ltr of water.

Now simmer gently till the vegetables are cooked and the soup has be flavored with veggies.

Skim the foam with a laddle.

Strain the soup. Add salt and pepper.

Clear soup is ready!

Ingredients

  • Salt as per taste
  • Pepper freshly crushed as per taste
Instructions

  2. Add 1.5 liter of water.

  3. Now simmer gently till the vegetables are cooked and the soup has be flavored with veggies.

  4. Skim the foam with a ladle.

  5. Strain the soup. Add salt and pepper.
  6. Clear soup is ready!

*** To jazz up this soup for my family requirements I do the following-

  1. Add some sugar to taste to cut through the tartness of tomatoes.
  2. Thicken it up by mixing 3-4 tbsp cornflour in 1/2 cup water and add it towards the end of cooking process.
  3. Saute 2 tbsp of chopped veggies in 1 tbsp butter. I used onion and carrot here. You can use any variety of veggies.
  4. I also add some pizza seasoning or oregano in the end. My kids love this twist.
  5. Add a dash of soy sauce and red chilli sauce for a spice hit.
  6. Add some chicken for a non veg flavored soup.

**Please note clear soup is very good for weightloss but over consumption is not advisable because the nutritional benefits are too less.

On the side serve some bread toasted with cheese. It’s so yum!!!!

Honestly this soup is one of our favourite. It’s a great way to use up your leftover veggies. It’s the best way to not waste any veggies.

  1. This is one is my go to soup too! We mostly have it when there is too little of all vegetables left and all mixed together in the soup taste good! 🙂
