In a bowl peel the potato and chop in thick wedges.
Now make sure you pat dry the potato very well.
In a bowl add potatos, corn flour, salt, red chilli powder. Mix well.
Heat oil in a kadai or wok.
Now Fry the potatoes in medium flame in two batched. Dont over crowd the potatoes.
Drain and keep aside.
Now heat the oil to hot and flash fry the potatoes once again in two batches.
serve with ketchup and enjoy!!
For baking the wedges add oil in the potato and do not add corn flour. Mix with all the optional herbs.
Now arrange on a baking tray lined with parchment paper and spread the potato wedges. Do not over lap the potatoes. Bake at 200C for 15-20 mins.
