Beetroot-Carrot-Cutlets

These beetroot & Carrot Cutlet cum lettuce pockets are great way to make party starters hasselfree. No maida, shallow fry, wonderful starter, great lunchlox Idea, use as a burger patty. Interested?!
I can sneak in more veggies if I want. Its so nutritious and tasty. Just yum!!

The bright red color from the beetroot really brings out the oomph factor with contrasting green of lettuce. Flavor wise the cutlet is slightly sweet from the beetroot & carrot  with rice flour to bind. Crunch from lettuce works well with the soft cutlet.

So would you like to make this! Do try it once and sprinkle lemon juice and chat masala if you like.

Ingredients:

2 large beetroot boiled and grated
2 large carrots grated
2 medium hard boiled potato mashed
Rice flour (just enough to bind it into a dough for cutlet)
2 small red onions finely chopped
Salt and pepper to taste
Lettuce leaves for garnish and making pockets

Method:

Mix the residue, potatos, onions, salt and pepper. You will get a wet mixture.

Now add 2-3 spoons rice flour. Mix. Add more and adjust till you get a soft dough like texture.

Now make balls and flatten to form cutlet.

Shallow fry 2 min each side. Use a slotted spoon to remove on a paper towel.

Now take your serving plate. Scatter lettuce leaves and cutlet on the plate. Garnish with lemon wedges.

This recipe is perfect for snacking. I have used lettuce lead as a wrap for my cutlet. But this can be easily usesd in burgers as party also.
