Beetroot & Potato Croquettes

I am a big fan of fast, easy and delicious recipes. Beetroot & Potato Croquettes  are on the same funda. Fast, easy made just under 15 mins.

Often my son shows tantrum in eating his lunch so I have to come up with tasty food in evening so that atleast he fills his tummy. He’s so picky little fella that you can’t​ repeat anything that looks or taste same. And he’s only 3…. Right. I know. I didn’t had so many tantrum when I was so small.(yes I asked my mum about that)

So these Croquettes  you can pre-prep them(or freeze) and fry whenever you need to eat. In total it took me withing 15 mins from prep to the serving plate as I already had boiled Beetroot, potato and paneer. However you can also stuff them with cheese. But I have grated and mixed it with the dough. And a secret ingredient to bind which is not maida, cornflour or bread crumbs. Cool na. If not for frying them these are totally healthy??. Oh you can also airfry them is you have one.

Beetroot-Potato-Coquettes

Serves 2-3

Directions to make beetroot & potato croquettes-

Ingredients:

2 medium beetroot boiled

1 large potato boiled

1/2 cup crumbled paneer(homemade is better)

1/2 cup processed cheese

Salt & pepper as per taste

Green chilies finely chopped (optional)

1 onion finely chopped (optional)

1/2 two minced garlic or garlic powder(optional)

1/2 cup to 3/4 cup Oats Powder(the secret ingredient)

Oil for frying

Method:

Heat oil on medium flame.

In a bowl grate Beetroot, potato. Add crumbled paneer.

Add salt, pepper, onion, garlic powder, cheese. Mix well. You will get a wet mixture.

Now add the oats powder 2-3 tbsp at a time and the mix. The mixture will start to come together.

Avoid adding too much. Just add enough so balls can be made. They should not break while frying.

Now fry till golden from outside.
I have served with ketchup and Cold coffee.
