Blueberry Ice Tea- Recipe Swap Challenge

This month in my Facebook group Recipe swap challenge I was paired with Mayuri who blogs at MayuriJikoni.com

In the challenge both participants have to cook one recipe from each others blog and post in a certain time frame.

This gives us an opportunity as bloggers to support each other and cook recipes that we always bookmark but never end up trying due to so many reasons?

Why I choose this recipe!!

As I blogger I want to try new ingredients and I have never used blueberry in my cooking. So thought to start by trying this simple recipe. Although we don’t get fresh blueberries in India I bought dried blueberries for this recipe.

A refreshing summer drink made with blueberries and cooled tea mix.

Ingredients
  • 3 tbsp dried bluberries
  • 5 cup water
  • 1 cup boiling water
  • 3 Tea bags
  • 10-12 Mint leaves
  • 3/4 tbsp sugar
  • 1/8 tbsp salt
  • 4 tbsp lemon juice
  • 1 tsp lemon zest
Instructions
  1. Add mint leaves and tea bag to hot water, boil for 2 min and let it cool. I let it naturally cool down.

  2. Strain and keep aside. Prep other ingredients.

  3. Since I am using dried blueberries I soaked them in little bit hot water. After half and hour puree it and keep aside.

  4. Now in a pitcher or jug add the tea liquid and blueberries puree.

  5. Adid salt, sugar, lemon zest, lemon juice and lots ice cubes.

  6. Serve chilled.

Can be made ahead of time for party of gathering.

  1. Refreshing, excellent for summers and berries are my favourite any day. It is sad we don’t get fresh ones much in India and the ones we do are damn expensive too. ha ha.. Loved the drink!5 stars
