Carrot & Potato Bites | Kids Special Breakfast | Veg Patty Bites

I made these carrot & potato bites for my little guys tiffin and they were a hit. When he came back whole tiffin was empty….what else a mother would want. I sneaked grated carrot as an experiment and plan to add more grated veggies for future project.

I love the fact that with a little glam up I can covert this simple breakfast for kids to a adult breakfast in just minute. All I did was made little finger shaped patty, shallow fried and served with garlic mayo, pickled cucumber and fresh orange juice. #nomnom

Ingredients:

2 boiled potato boiled and mashed

3/4 cup grated carrot

Salt & pepper to taste

Breadcrumbs for binding(almost 1/2 cup)

Wholewheat bread slices cut in rings

2 tbsp Mayonnaise

2tsp Salad(finely chopped onions and carrots)

Method:

Mix together potato, carrots, salt, pepper and bread crumbs to get a dough like consistency.

Make round patty’s.

Shallow fry them in a non stick pan.

For serving smear mayonnaise on bread rings, top with patty and some salad and fresh coriander.
