Eggless Whole Wheat Christmas Fruit Cake, No Alcohol, Vegan

Would you believe if I say this eggless fruit cake is healthy but still tasty.

This christmas fruit cake is eggless, wholewheat, no butter, no sugar and no alcohol.

Plus its a vegan christmas cake, even better.

Will mention variations, substitutes and different method for without oven instructions in recipe card.

What dry fruits to use in a fruit cake?

You can use any dried fruit like apricots, cranberries, plum, kiwi, papaya, raisins, dates, black raising. Choice is all yours.

Apart from these you can add nuts like almonds, cashews, pumpkin seeds, melon seeds. Even tutti frutti tastes nice.

Its all about whatever is available and whatever you prefer.

Directions to make Eggless Fruit Cake-

Ingredients-

1 cup (or more if you prefer) dried fruits and nuts- I have used 2 tbsp each almonds, raisins, dates, apricots, tutti frutii,

3/4 cup fresh orange juice

Pods of 3 cardamom

3 cloves

1 inch cinnamon

1/2 tsp nutmeg powder

1/4 tsp rock salt or regular salt

3/4 cup jagger/brown sugar/regular sugar(use any)

1/4 cup water

1/4 cup oil, you can also use coconut oil or olive oil

1 cup whole wheat flour

1/2 tsp baking powder

1/4 tsp baking soda

Method-

In a bowl add chopped dry fruits and nuts. Add 3/4 cup orange juice. Leave aside for 2 hours min. You can soak this nut mix for up to 24 hours in fridge.

*Make sure your nut mixture is at room temperature before you begin baking.

Preheat the oven for 180°C for 15 mins.

Hand pound the cardamom pods, cinnamon, nutmeg, clove and make a powder.

Now start by adding sugar(jaggery or brown sugar whatever you are using) in a saucepan. Ads water. Heat on low till sugar melts.

Now add the oil. Mix.

Now add the flour, baking powder, baking soda and spice mix.

Mix thoroughly.

Lastly add the soaked dry fruit with the juice.

Mix again.

Pour in a lined round tin.

Bake for 25 mins. Check by inserting a toothpick in the middle.

Once done dust some icing sugar.

Enjoy!

The juice and dry fruits keep the cake very moist and gives it a very nice flavor.
