Eggless tea cakes are my favorite. No cream, no fancy shenanigans just plain simple tea cake. Eggless Vanilla Tutti Frutti cake is one such family favorite that never fails to impress.
Even if you are not a fan of tea cake still you must try this cake. Its easy and tastes amazing; best part you wont even miss the egg.

Directions to make Eggless Vanilla Tutti Frutti Cake-
Ingredients-
1/2 cup curd *see notes after the recipe
3/4 cup granulated sugar
1/4 cup oil *see notes after the recipe
1 tbsp vanilla essence
1 cup wheat flour/atta *see notes after the recipe
1 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1/4 cup milk
1/2 cup tutti frutti plus more for topping the cake
Method-
In a bowl add curd and sugar. Mix until sugar melts.
Next add the oil and vanilla essence. Mix well.
Now add flour, baking powder and baking soda plus the salt.
Mix well to combine. Your batter will be thick. Add the mix to smooth out the batter.
Lastly mix in the tutti frutti.
Pour the batter in a round cake pan which is greased and lined with parchment paper.
Top with more tutti frutti.
Bake at 180°C for 35 mins.
Recipe Notes –
- Curd should not be sour.
- Curd should not be too thick or too watery.
- You can use any oil you like. Olive oil works great too.
- Replace flour with maida is also ok or can mix half All purpose flour and half whole wheat flour.
- Cake batter should be thick but pouring consistency.
- If you cake is browning a lot from top then cover the cake with foil or parchment paper.
- Oven temperature can vary so lower the temperature of your oven if the cake has browned a lot but is yet to cook front the middle.
