Eggless Jaggery Cake, Whole Wheat Zero Sugar Kid/Baby Friendly Cake

Could you believe that this cake is made without sugar. To replace sugar I used Jaggery powder.

Kid friendly cake, baby friendly cake, even adults love it.

Eggless jaggery cake feels like having a bit of healthy cake as I have used whole wheat flour for the cake, no butter is used, no eggs so do try this at home.

Directions to make Eggless Wholewheat Jaggery Cake-

Ingredients-

1 cup jaggery(add a little less for less sweetness)

3/4 cup milk

1/4 cup oil(I used olive oil)

1 tbsp curd

1/4 cup sooji/ semolina

1 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

A pinch of elichi/cardomom powder( add more if you like the flavor)

*you can also add some fennel powder

**add nuts of your choice

Method:

In a bowl add jaggery powder and milk. Mix untill most jaggery is dissolved.

Add the olive oil and curd. Mix well.

Now add the flour, baking powder and baking soda.

Lastly add elichi and if using fennel powder and nuts(even nuts powder you can add).

Mix in a smooth batter. This is a thick consistency batter. But the cake still comes out soft and spongy.

If your batter is too thick add few tbsp of milk to adjust the batter.

Bake in a preheated oven at 180°C for 35 mins.
