Fresh Strawberry Cake is incredibility easy to make and yet delicious cake.
When I was searching for recipes for making strawberry cake all I could find was recipes made with Jell-O. It was a complete no-no. Because the very first reason to make it was to be able to get this sweet and citrus fruit flavor in cake.
Its the season of love and everything seems sweet when you are in love.
So as an experiment added strawberry puree with my basic Vanilla cake recipe and it turned so GOOD!! So happy to be sharing with you all. If you’ve got sweeter strawberry then you are in for a treat. I haven’t added any artificial color so I got this pretty pink color cake. Made in a small heart shaped tin for my Valentine. Topped it with chocolate ganache icing. Its rightly said strawberry and chocolate and match made in heaven.
The cake tastes sweet, bit tangy and flavorful. The chocolate ganache really works well with the tang of strawberries.
Directions to make Fresh Strawberry Cake-
Ingredients:
100 gm Strawberry cleaned in roughly chopped
3/4 cup sugar/honey(You may need more as per the sweetness of strawberries)
1/2 cup oil/olive oil
1 tsp Vanilla Essence
1 cup All purpose flour/ Maida
1 tsp Baking powder
1/2 tsp salt
2 eggs(replace with 1/2 cup fresh curd for egg-less version)
Method:
Pre heat the oven at 180 C for 10 mins.
In a deep bowl beat eggs and sugar.
* If using honey, beat eggs first till light and frothy then add honey.
* If making egg less cake then mix together curd and sugar until most of the sugar is dissolved. Then beat lightly with a hand whisk.
* If making egg less then just mix curd and honey till mixed completely and continue.
Add oil and vanilla essence. Mix and combine thoroughly.
Add flour, baking powder and salt.
Mix to make a smooth batter.
Pour in a prepared lined 8” tin.
Bake for 30 min or till toothpick inserted comes out clean.
Leave it to rest on a wire rack to call completely.
For the ganache icing simple heat fresh cream and cooking chocolate in 2:1 ratio till all the chocolate is melted.
Now leave it to rest. It will thicken. Using a balloon whisk smothen it. Pour the ganache in a piping bag and decorate as you’d like.
