This is an easy soup that is warm and comforting in a cold night. Its a classic combo and a must try. It almost zings up your usual soup and is perfect for an easy and light weeknighly meal.
You can make the stock ahead of time and when to consumer just add lemons and coriander and the soup is ready. Its easy, fast and so delicious.
The base of this soup is a good vegetable stock. So if your stock is flavorful so will be your soup.

Directions to make Lemon Coriander Soup-
Ingredients:
3 cups Vegetable stock
2-3 tbsp freshly squeezed lemon juice
2-3 tbsp finely chopper fresh coriander
Salt and pepper as per taste
Method:
In a saucepan bring the stock to boil.
Add lemon juice and coriander leaves.
Finally add salt and pepper as per your taste.
Do not cook any further otherwise the soup may turn bitter from over boiling.
Server hot.
PS-
- Add lemon juice only when you are ready to serve other wise the soup will not stay good.
- You can also thicken the soup with some corn flour.
- Serve with some garlic bread for a filling dinner.
