Meat masala bharwa baingan is my instant hack to a tasty finger licking and instant stuffed baingan masala when you have no time to make stuffing from scratch.
I was pretty much bored with usual baigan variety so I thought of this hack. I simply added meat masala(which is purely vegetarian and a wonderful blend of spices) to baigan and Voila. These baigan are tangy, spicy and so yummy. No one could tell the difference that they are not made from scratch. Ha! Mission accomplished.
If you are not comfortable using meat masala go for sambhar masala, pav bhaji masala, shahi biryani masala or kitchen king masala instead and everything else remains the same.

Directions to make Meat Masala Bharwa Baingan-
Ingredients:
250 gm bringal/baigan
5 tbsp meat masala
1 tsp salt
1 large onion chopped
1 large tomato chopped
1 tsp ginger garlic paste(optional)
3 tbsp mustard oil
1 tsp jeera/ cumin
1/2 tsp hing/ asefotida
Method:
To prep the baigan hold the tip and make two opposite slits.
Add Salt to the meat masala and mix well.
With a tea spoon stuff baigan with meat masala.
Heat mustard oil till smoking.
Now add hing and jeera. Also add the onion.
Cook till the onions are soft.
Add prepared baigan and roast for one min.
Add tomatoes and any remaining meat masala stuffing.
Add 1/2 cup water and cook till baigan is done.
Enjoy with hot phulkas, masoor daal and spicy mirchi achaar.

The baigan curry looks so delicious. We all love stuffed baigan in our family but I have not come across this ready made mixture you have used for the filling. I will see if any of the Indian stores sell it here.
