Mushroom and Carrot Pulav

I love adding lots and lots of vegetables to my pulse. It’s like a comfort meal for me. Lazy Sunday afternoon, I decided to go against my own routine way of cooking pulse and adding just a handful of ingredients.

Result was this amazing mushroom and carrot pulse + this pulav has no potatoes so that’s new for me.

A home style mushroom and carrot pulav for a lazy afternoon. Perfect one pot meal for busy people.

Ingredients
  • 2 Cup Basmati or Pulav Rice
  • 100 gm Button Mushrooms
  • 2 Large Carrots I used orange ones
  • 1 Large Red Onion
  • Salt As per taste
  • 1 Tbsp Kashmir Red Chilli Powder
  • 1/4 Tbsp Turmeric Powder
  • 1/2 Tbsp Jeera powder
  • 1 Tbsp Coriander Powder
  • 1/4 Tbsp Garam Masala Or add biryani masala of your choice
Instructions
  1. Wash the rice and soak in 4 cups of water for 30 min. 

  2. Meanwhile rice is soaked chop just the heads of mushrooms and also carrots and onions. I like to chop them small, it’s entirely your choice how you want to chop. 

  3. In a heavy bottom pan add some oil. 

  4. Add the chopped veggies all together. Saute them till they get some color and start to cook half way. 

  5. Add salt and all the other masala. Cook for 10 secs till masala is cooked. 

  6. Now add the rice and the water. Cover and cook till rice and veggies are cooked. 

  7. Enjoy 

Recipe Notes

I like to serve my pulse with fried papad, turnip salad and top my pulse with fried onions. 

Other times I could just add some achaar and curd.
