Panzanella- The Italian Bread Salad

Panzanella is an italian bread salad made with stale bread and chopped tomatoes that’s very popular salad dish for summers.

It can also include onions & basil and is topped with a dressing of vinegar and olive oil. All that stale bread perfectly soaks up the dressing and salad is super refreshing and delicious.

I have many Fb groups and activities that are monthly or weekly where I submit my recipes. This time I tried my hands on something new.

This recipe is submitted as an entry for the fb group THE RECIPE SWAP CHALLENGE where two members swap recipes from their partners blog and post on their own blog. So I thought this is interesting as you get to try something new and fresh.

And I got partners with Seema who blogs at Mildly Indian. And amazing blog with a wide range of recipes.

And I got my eye on the Panzanella recipe and I zeroed in on it.

The italian bread salad.

Ingredients
  • 5 Slices Stale Bread
  • 2 No Tomatoes
  • 1 No Onion
  • 1 Small Cucumber
  • Salt & pepper as per taste
  • 5 Tbsp Olive Oil
  • 1 Tbsp Vinegar Can use lemon juice as well
  • 2 Pinch Italian Seasoning optional
Instructions
  1. Start by chopping tomatoes, cucumber and onions. Have roughly chopped them. Add little bit of salt so that they start to leave their juices.

  2. Now in a separate bowl or a jar with a lid add olive oil, vinegar, salt & pepper and italian seasoning. Mix very well. If using the jar method close the lid and wack it really well. The oil and vinegar should be completely mixed.

  3. Now tear the bread and add to the salad mix. Also tear some basil and add.

  4. Now top with oil and vinegar dressing. Mix well. The salad is ready to consume.

  5. Enjoy!

Recipe Notes

You can also roast the bread and then add to the salad. It makes the salad a bit crunchy.

  1. I love Italian Cuisine and this salad as well. Makes good use of bread with the vegetables with aromatic basil leaves. A great side dish to pasta or some croquettes.5 stars
