How many times you have made pasta super delicious but without cheese or APF. It’s like a revelation. Pasta can be healthy too. I add a lot of veggies in my pasta to make it healthier.
The super crunchy top is what makes it yummy. Of course you can add cheese if you want but I was out of cheese thus the changes and to my surprise it was a hit.
Please do try it without cheese, it does deliver.
Directions to make healthy penne pasta in white sauce-
Ingredients-
For white sauce
2 tbsp APF
1 cup milk
Salt & Pepper as per taste

For pasta veggies
2 cups assorted veggies – I have used cauliflower, red & yellow bell pepper, French beans, carrots
For pasta
Boil penne pasta as per instructions on the pack
For top crunch layer
1 cup bread trimmings
1 tsp butter
Fresh coriander/ basil
2 tbsp extra virgin olive oil
Salt
Blend all the ingredients together to form the crumb
Method-
Heat pan till its very hot. Add olive oil. Saute veggies till slighly charred. Keep aside.
In the same pan heat butter. Sauté APF for 15 sec. Add milk slowly whilst whisking continually. Add salt and pepper.
Mix veggies. Transfer into an oven proof dish. Top with the crumb mix.

Bake at 180°C for 20 min.
Serve hot.
