Tasty Banana Cake Recipe(with eggless option)

I feel like banana cake is the king of cakes. And its actually one of the most tastiest and yet the easiest cake that you can try.

The recipe is literally mix dry with wet ingredients type. And you dont need any fancy ingredients or process to learn.

The single most important thing in a banana cake is the banana. You need a super ripe banana. The almost black skinned ripe banana. The ripe the better as they turn sweeter as they ripe and oh gooey too.

Tips to make a banana cake from scratch-

  1. Pick a really ripe banana that has mostly black skin.
  2. Dont mash or blend your banana if you are not ready to bake yet.
  3. For eggless version simply swap the each egg with 1/4 th cup of curd.
  4. Add more sugar only if you like sweeter cakes otherwise the measurement is perfect as bananas are also sweet so that adds.
  5. Add nuts, chocolate chips, caramel bites or anything that you like. Totally option. I love walnuts with my banana cake.

Directions to make a tasty banana cake-

Ingredients-

3-4 medium size ripe bananas

100gm butter, mine is salted

1 tbsp vanilla essence

1 cup sugar

2 eggs( for eggless 1/2 cup curd)

160ml milk

2 cups wheat flour or all purpose flour

2 & 1/2 tsp baking powder

Handful walnuts broken in chunks + plus more to top

Method-

Preheat the oven at 180°C for 10 mins.

Mash the banana with a fork and keep aside.

***you can choose to blend for banana puree too. I like chunks of banana with texture so I mash with a fork.

Mix sugar and butter and beat till its pale and fluffy. Use a hand whisk or a machine.

Now add vanilla essence. Mix again.

Add egg one by one and blend to incorporate the egg.

Add milk and mix again.

Now add the flour and baking powder. Mix to make a smooth batter.

Now lastly add walnut and mix.

Pour the batter in one 8 inch round tin or like I have done in two 4 inch round tins. Top with more walnuts.

Bake for 35-40 mins untill the centre comes out clean when you insert a toothpic. Leave in the tin to cool a little bit.

Scrape the edges with a knife and flip it on to a wire rack. Tap on the back to ease the unmoulding.

Let it cool completely before slicing. Enjoy!!
