Haven’t you heard a gazillion times how you need to have more soup and veg if you are to loose weight.

I am a fan of soups and make them often for dinner time. Yes admittedly I am also wanting to loose a few inches and weigh less than what I currently weigh.

Most soups have so many additions that keeps reducing its nutrient value.

Tomato and pumpkin soup

The tomato and pumpkin soup is a winner for me as its-

🔹No additives like soy or cornflour

🔹Naturally sweet from the pumpkin

Can I make this soup ahead of time-

Yes, definitely. This soup is one of those soups that are simple to make and can be made ahead of time.

Can I freeze tomato & pumpkin soup?

Yes you can freeze this soup for up to 15 days. My recommendation would be to freeze and usable portions so that you avoid taking out the whole batch all together. Remember to date your soup batches and use them accordingly. I have yet to tru freezing the soup for more than 15 day, if I do I will update here.

Is making fresh soup better than freezing in bulk?

Its entirety up to you. Yes fresh soup with fresh ingredients is better. But for most people who would freeze a soup will want to do that convenience. Imaging you are a mom or a working professional and this way you can enjoy the soup if you find time to cook once a week too. So yes its okay to freeze soup if you cant cook daily.

Tomato and pumpkin soup

Directions to make Tomato & Pumpkin Soup-

Ingredients-

200 gms roughly chopped tomato

200 gms roughly chopped orange pumpkin

1 red onion chopped roughly chopped

5-6 cloves of garlic

Salt as per taste

Pepper as per taste

1 litre of water

Method-

In a pressure cooker add tomato, pumpkin, onion garlic.

Add litre of water. Close the lid.

Pressure cook it on low for 20 mins.

Switch off the flam and let it release the steam itself.

Open the lid after 20 mins. Blend the soup with a hand blender.

Add salt & pepper as per your taste.

I dont like to strain my soup mostly but you can choose to do it too.

Serve warm.
