Onr of the basics of UP style cooking is making a flavorsome Pulav/tehri. Now the Tehri police will come up and say that these are two different things but in my humble opinion they are not so much.
So I decided to ditch my kadahi for this recipe and took out the cooker.
So what a pressure cooker essentially does is seal the flavors. And my one too that works so well most of the time is don’t forget the power of caramelization. Roast those veggies well and they will pay you later, the flavor comes out phenomenal.
So here’s the quick recipe, use whatever veggies you have. Add in some whole spices or bay leaf for more intense flavor.
