How to make Vegetable Fried rice

First things first let’s see the tips that I rely on so much to make these rice yum-

  1. Make the rice well in advance. Preferably overnight.
  2. Rice should be cool and not hot when making fried rice.
  3. When making rice in advance add salt and 2-3 tbsp oil. That seasons the rice and avoids sticky rice.
  4. Start with a big wide vessel or a wok.
  5. Your wok should be super hot before you add the oil.
  6. Prep all the ingredients; your vegetables and sauces before you start cooking.
  7. I like to keep my fried rice for like half and hour after making them as it takes on the flavours very well.

Directions to make Vegetable Fried Rice-

Serves 4

Ingredients-

4 cups cooked rice

3/4 cup purple cabbage or green cabbage

1/2 cup of sliced spring onions{only the onion part, reserve greens for later}

1/2 cup green, yellow and red capsicum

1/4 cup carrots chopped

Add chopped green chillies as per your taste or skip it

**You can also add baby corns or sweet corn kernels, zucchini, broccoli any Vegetable that you may have

Salt & pepper as per taste

1 tbsp dark soy sauce

3-5 tbsp ketchup

1 tbsp green chili sauce

1 tbsp red chilli sauce

1 tbsp vinegar or juice or a lemon (if using lemon add at the end when serving)

1/2 cup oil

Method-

Heat a large wok til it’s very hot.

As soon as you add the oil be ready to add all the chopped veggies at once. Also the green chilli

For garlic flavor first garlic will go for 3 secs and then the veggies.

Now flash fry/ saute for 2-3 mins max.

Start adding the sauces.

*** I like to measure and add the sauces in a cup so I can add all at once.

Add salt & pepper.

*** Go easy on salt as the rice and sauces already have a lot of salt.

Quickly add the rice and mix until combined.

Don’t over mix the rice.

In the end sprinkle the spring onion greens that you reserved.

Serve hot!!
