Vegetable Sooji Upma is a popular South Indian Breakfast.

Melt in your mouth Sooji Upma made with lots and lots of veggies. Typically served with coconut chutney. Love the fact that its gluten free breakfast idea that makes it even more tempting.

So for the longest time ever I could not get the right texture of Upma. Sometimes it was too sticky and sometimes it would be like a water slide.

But with time, patience and experimentation I have this tested recipe for you.

Ingredients
  • 1 Cup Sooji/Rawa
  • 1 Cups Water
  • 2 Cups Vegetables Onions, carrots, capsicum, green beans
  • 1 Tbsp Ghee
  • Salt as per taste
  • 1/2 tsp Chilli powder
  • 1/4 tsp Turmeric powder
  • For tempering
  • 1 Tsp Mustard seeds Rai
  • 1 Tsp Chana daal
  • 1 Tsp Urad daal
  • A pinch Of Hing
Instructions
  1. In a saucepan keep water to boil on simmer. 

  2. Now heat some oil and add all the ingredients under tempering. Let it crackle and crisp up. 

  3. Now add all the veggies and saute till soft. Make sure you don’t burn the veggies. 

  4. Add salt, red chilli powder and turmeric. Mix well. 

  5. Now add the sooji/Upma and saute with veggies for around 2 mins. 

  6. Now add the boiling water and mix well. 

  7. Cover and let it cook for around 7-10 mins. 

  8. Fluff with a fork. 

  9. Add the ghee. Mix again and leave it covered for some time. Fluff again. 

  10. Serve hot & Enjoy!!
