Zero oil Tomato & Pumpkin Soup, Vegan & Gluten Free

Ingredients

  • 200 gms roughly chopped tomato
  • 200 gms roughly chopped orange pumpkin
  • 1 red onion chopped roughly chopped
  • 5-6 cloves of garlic
  • Salt as per taste
  • Pepper as per taste
  • 1 litre of water

Instructions

  1. In a pressure cooker add tomato, pumpkin, onion garlic.
  2. Add liter of water. Close the lid.
  3. Pressure cook it on low for 20 mins.
  4. Switch off the flam and let it release the steam itself.
  5. Open the lid after 20 mins. Blend the soup with a hand blender.
  6. Add salt & pepper as per your taste.
  7. I dont like to strain my soup mostly but you can choose to do it too.
  8. Serve warm.
  9. Enjoy!!
