Vegetable Stir Fry For Weight Loss

Ingredients

  • 1 cup Purple Cabbage
  • 1/2 cup zucchini
  • 1/2 cup capsicum or bell peppers
  • 1/4 cup carrot
  • 1/4 cup doing onion + greens
  • 2 tsp extra virgin olive oil
  • salt and pepper as per taste

Instructions

  1. In a pan add olive oil. Let it heat up enough before adding veggies.
  2. Start by adding just spring.onion. Save the greens for later.
  3. Add Purple cabbage and carrots. Stir to cook for 2 mins.
  4. Add zucchini and capsicum. Cook for about a min.
  5. Add salt and pepper.
  6. Top with onion greens.
  7. Enjoy!!

Recipe Notes

  • Always prep all the veggies you want to stir fry in advance before you start.
  • Even prep all the spices or sauces ahead to avoid burning your stir fry.
  • To amp up the stir fry add soy sauce, chili sauce, peanuts or walnuts, even sesame seeds for crunch.
  • Always add spring onion greens at the end for maximum flavor.
  • Add micro greens, coriander, basil and other herbs for more nutrition.
