Zucchini & Bell Pepper Spaghetti Pasta

I love Zucchini & Bell Pepper Spaghetti Pasta. It’s a perfect vegetarian treat with lots of cheese.

Simple and classic flavors works best when looking for under 30 mins meal plate ideas.

Zucchini and bell peppers are so flavorful that this pasta needs no other meat. To all non vegetarian do try it and you might make it again and again.

I like that my veggies are a bit crunchy so it’s basically flash fry veggies in a bit of oil and there goes the noodles. These are egg noodles that I have used but you can also use veg noodles.

My theory is clear while making pasta, cook pasta al-dente(it should have a bite), add lots of veggies and dont forget the cheese. Enjoy. That is what Italian cooking is all about.

Directions to make Zucchini & Bell Pepper Spaghetti Pasta-

Ingredients: 

1 medium size zucchini(I have used only yellow)

1 cup mixed color bell peppers(red, yellow & green)

1/2 tsp minced garlic

1 pack spaghetti pasta

Salt & pepper as per taste

1/2 cup Parmesan cheese (substitute with processed/ mozzerella cheese)

To add more flavor add red sauce or white sauce

Method:

In a sauce pan boil the pasta til al-dente. Strain and keep aside.

In a non stick pan heat some olive oil.

Roast the garlic till aromatic.

Add in the zucchini and bell peppers.

I like to saute them till slightly charred.

Mix salt and pepper as per taste.

Add sauce of your choice.

Finally add the pasta. Mix gently.

Sprinkle cheese and give a final mix.

Serve hot.
