Healthy baked vegetables. This dish is delicious as well as appetizing. Slightly charred cheese on top is making me drool all over it…mmmm??? served it with garlic bread(store bought).

Wondering how these heavenly looking goodness can be healthy. Well for starters I have used regular wholewheat/ atta instead of maida. The whole preparation is in 1tbsp butter. Cheese is also used in limited quantity. You can also leave cheese altogether if you’d like.
I have sprinkled cheese only on part of my pan as in my family there are both who can have it and who cannot. The charred taste on the cheese while baking is just divine. After 20 minutes my eyes were stuck to the oven window waiting when it will char up. It just don’t only look good it tastes even better.
Ingredients:
For vegetables-
Use any seasonal vegetables. I have used mushrooms, baby corn, cauliflower, carrots, capsicum, red & yellow bell pepper, french beans.
Saute all the veggies in a hot pan with olive oil until nice color and almost cooked.
It’s important that the pan is hot with oil before you put the veggies.
Add salt. Keep aside.
For the sauce-
4 tsp wholewheat flour
250ml milk
150ml water
2tbsp cheese+ 2 tbsp to sprinkle on top
1tbsp butter
Salt and pepper
Italian herb mix (optional)
Method:
In a bowl mix together flour, milk& water. Mix well with a ballon wisk.
Hear butter in a pan. Pour the flour mix and start whisking. The mixture will thicken in a few min. Add in the cheese. Add salt and pepper as per taste.
Remember there is salt in the veggies and cheese is also salted so add salt accordingly. Taste further and then adjust. And Italian herb seasoning if you’d like.
The sauce should be pouring consistency it will thicken further as it cooks.
If your sauce has thicken too much add milk or some water to adjust.
Mix in your veggies.
Now tranfer this mixture to an oven proof dish. Sprinkle the cheese on top and bake for 30 min at 220°C.
I have also toasted some garlic bread without any oil or butter in the oven.
I know you would want to serve but just let the it rest 5 min before serving. Trust me it will be worth it.
