As soon as I saw the post by Freda for Eggless sooji cake I put in my to list of things to bake.
It’s been a while before I tried. This cake is perfect for tea time or if you have a gathering or a kitty party. You can easily mask this cake in a pudding or custard or simply serve with ice cream. In the past week I have tried few of these methods and I would share them soon.

Directions to make Eggless Sooji Cake-
Simple Eggless sooji cake, perfect for tea time. Easy to make, very moist cake. Can be tried easily by begginers.
- 1 1/4 Cup Sooji Rawa/semolina
- 1/4 Cup All purpose flour Maida
- 1 1/2 tbsp Baking powder
- 1/2 tbsp Baking soda
- 1/4 tsp Salt
- 1 Cup Sugar
- 1/3 Cup Flavor less oil
- 1/2 Cup Fresh curd Dahi
- 3/4 Cup Milk
- 1 tsp Vanilla Essence
- 1/2 Cup Tutti Frutti
- 1 Tbsp All purpose flour Maida

Sift the dry ingredients except sooji and keep aside.

If using tutti frutti coat it with 1tbsp flour and keep aside.

Now in a big bowl whisk curd till its smooth. Now add the oil, milk, sugar and vanilla essence. Mix till smooth.

Now add the sooji to the curd mix and keep aside for 30 mins.

Grease an 8inch baking pan with parchment paper and keep aside.

After 20 mins pre heat the oven at 180°C for 10 mins.

The sooji should have absorbed the liquid from wet ingredients. Now gently fold in the dry mix(step 1)and tutti frutti mix (if using).

Pour in the cake tin and bake for 30 mins.
