Herbed Egg Pancake

Eggs are a powerhouse of proteins. Instant energy, awesome taste and versatility make it amazing option for breakfast. Just got some amazing baby tomatos from the supermaket yesterday.

I just had to use them. But with omlet …..boring. Finally decided to make this. Best part decided what to put on the go.

Ingredients:

3 eggs
6 baby tomatos halved
2 onions roughly chopped
Few sage leaves
1tsp Dried mixed herbs
Salt & pepper as per taste

Method:

In a nonstick pan heat some oil. Add onions. Saute for few sec then add baby tomatos. Let it cool for 1 min. Remember we don’t have to breakdown the tomatos. Add salt.

In a bowl add eggs, sage, salt and pepper. Mix well.

Pour over the eggs in the pan. Cook on the least heat as possible. Mine took about 7 min to cook.

Let it rest for 3-4 min in the pan before taking it out.

Just slide it over to your serving plate. Enjoy with toast!!

Ps.

The key here is to balance the salt. Make sure you put just enough.

How To Make Custard Powder Cake

I was looking for a cake recipe with different flavour from general. Looked for a lot of recipes online. Then again ingredient choice is something that I lack. As I want things that I already have in my pantry, I mean I don’t want to go searching for ingredients in supermarkets.

This cake recipe is from Nigella Lawson, a very renowned celebrity chef. I have been a fan of her shows and she and her shows are fodder for many of my dishes.

The sponge is very light, soft and airy. Totally melt in the mouth. This is the easiest cake till now that I have made. I vouch by it.

So let’s begin.

Ingredients:

1½ cups all purpose flour
3 tablespoons custard powder
2 teaspoons baking powder
½ teaspoon baking soda
4 large eggs
80 gms butter
1 cup superfine sugar
2 – 3 tablespoons milk

Method:

Make sure everything you need is at room temperature before you start.

Preheat the oven to 180°C

Butter and line the cake tin.

Put all of the above ingredients except the milk, into a food processor.

Process to a smooth batter, and then add the milk a tablespoon at a time to make a soft dropping consistency.

Pour in the tin and bake for 30-35 min until done.

The cakes will have risen and feel spookily puffy; this is because of the cornflour in the custard powder. Let the tins sit on a cooling rack for 5 minutes and then turn them out on to the rack, peeling away the paper.

Chicken Saagwala, Palak Chicken

Succulent chicken saagwala is chicken and spinach gravy. With winters hitting in with full swing this recipe always bring warmth, serve with hot roti and vinegar onions.

This is my go to recipe in winters. I usually clean the saag, boil, blend & store for use later. All I need to do is cook the chicken with saag and I am done making dinner. Everybody is just licking their fingers and fighting for more.

Directions To Make Chicken Saagwala-

Ingredients:

3 bunches spinach / palak
600gms Chicken cleaned
1 tbsp Ginger garlic paste
2 medium tomatos pureed
Salt as per taste
Red/green chillies as per taste

Method:

To prepare palak, clean the leaves & pressure cook for about 5 min. Blend into smooth puree.

Now in a heavy bottom pan heat 5 tsp mustard oil.

Add ginger garlic paste. Fry for a few seconds. Dont let it burn.

Add the tomato puree. Mix well & cook for 5 mins.

Add chicken to this and let it cook for 10 min on full flame without lid.

Add the spinach and let it Cook for 30 mins at low heat with lid on.

Add salt and red chilli powder. Cook for another 15 min till chicken is cooked and thick palak gravy is left.

Serve it with hot phulkas and onions.

Banana-Choco Muffins

Having ripe bananas in the fruit basket caught my attention as no one was eating them. To very best I could use them in one of my sweet recipes. Though wanted to try something different.

Recently I had posted Oreo brownies and I am so I’m love with them so I topped these with crushed Oreo biscuits. They looked gorgeous and gave it a very tasty crunch.

Single-Shot-Muffin

This recipe practically took me 10 min to assemble.

Ingredients:

2 medium size ripe bananas mashed lightly
1/2 cup granulated sugar
1/2 cup all purpose flour/ Maida
1/2 cup vegetable oil
1 big pinch baking powder
1 tsp cocoa powder
Salt a pinch
1 tbsp Vanilla essence
Milk to adjust the consistency
2 Oreo biscuits

Method:

Preheat the oven at 180°C for 10 min.

In a heavy body saucepan heat the banana and sugar until cooked. The consistency should be thick and sugar should be caramelized. It will take 4-5 mins to reach this point.

Add oil. Mix until combined.

Now sift in the APF, cocoa powder, salt. Mix well.

Now line the cup cake tin and scoop 2/3 of the better. Top with crushed Oreo.

Bake at 180°C for 15-20 min until done.

Anda Malai Curry, Creamy Egg Curry

This anda malai curry is thick luscious and creamy gravy which mixed up with boiled eggs make it even more divine.

Its creamy curry not only comes with malai but with the way masala is cooked. Its one of my family’s favourite meal on a lazy sunday.

Egg is one ingredient which can be easily converted into breakfast luch and dinner. Wow such diversity.

The ingredients are almost the same that all of us might use. I guess my method is a bit different and it surely reflects in the end result.

Directions to make Anda Malai Curry-

Ingredients-

4 eggs boiled
2 onions roughly chopped
Ginger garlic paste 2tbsp
3 medium tomatos chopped
Salt as per taste
Chillies as per your taste
Turmeric powder
Coriander powder
Garam masala
All spice leaf/ bay leaf
1/4 cup fresh malai/ cream

Method-

In a heavy bottom pan head some oil. Add the onions and fry until caremalized.

Add ginger garlic paste. You can also add green chilli. After a minitue add tomatos. Cover and let it work its magic.

Now allow the mixture to cool down. Grind it into a fine paste.

Back into the pan. Add the masalas.

Add malai/cream and mix well.

Adjust the spices and salt. Mix in the boiled egg gentely.

Add 1 cup water and simmer for 5-7 min. Voila!!!!

Ps.

Add bit of kasturi methi in the end and you get another dimension to this tasty dish. Make sure you crush them nicely in your palms so as to relase it’s full flavours.
