Bharwa Karela | Stuffed Bitter Gourd Indian Veg

Stuffed Bitter gourd or bharwa karela is a typical north Indian vegetable preparation. There may be many haters of karela around me. But I still find someone or the other saying ‘hey I love karela’ ?

As a kid I hated it but as a rule in our house” you have to eat whatever is made”so I had to eat karela. And with time I started liking it. This recipe is typical of my mom. She will use tons of mustard oil for this. So not for calorie conscious one but it helps make one hell of bharwa karela.
The spice blend for stuffing has all the spices which make it tasty and delicious.

Spice-Stuffing

Start by peeling the skin of karela. Make a slit lengthwise and salt it generously and dry it under the sun for at least 2 days. Pat dry any excess moisture. Now its ready for final prep.

Bitter-Gourd-Cleaned-Washed

Ingredients:

For stuffing

2tbsp fennel/sauf seeds roasted

1tsp roasted cumin powder

1 tsp red chili powder(or more if you want hot)

2 tsp coriander powder

1 tsp garam masala

1/2 tsp haldi/turmeric powder

Salt as per taste

2tbsp extra virgin olive oil

For veg

Karela which we prepared by drying

2large potato’s cut in length

2large onions cut in length

1tomato cut in length

Salt as per taste

Turmeric powder a big pinch

Green chilies(optional)

Mustard oil for shallow frying

Method:

Blend all the ingredients under stuffing into a paste.

Now fill the karela with the stuffing generously and tie with a thread tightly.

Now heat the mustard oil in a non stick pan till smoking. Add the potato’s and onions. Cook till they get nice color and almost cooked.

Now take them out in a pan. And fry the karela till golden. Add tomato’s. Let it cook for 30 sec. Now add the potato and onions. Also add salt, turmeric & green chilies. Cook till all combined.
