How many of you are bored of the routine of dal sabji roti. This particular grilled chicken wrap has in it all. Plus some more to keep you asking for more. It all started with my love of hummus. The day I tasted hummus it became my comfort food. Its healthy also…yay!!!
But this wrap need something more, like a little more kick. I tasted a falafel in the food court of a mall and that was it. But again maida roti, mayo sauce and cheese…..no no no. Making this a healthy homey style wrap was My objective.
Ofcource you can make your own version of it. Today I am sharing my own.
2 cups hummus( click here for recipe)
2 cups finely chopped lettuce
For garlic sauce:
3tbsp hung sour curd
2tbsp garlic mayonnaise (optional)
2 tsp garlic powder
Salt & pepper as per taste
For pickle relish:
2 cups finely chopped onions, tomato, red & yellow bell pepper, cucumber, carrots
1/2 cup vinegar
1/2 tsp salt
1/4 tsp sugar
For chicken marinade:
450 gm chicken breast
2tsp hung curd
Dry mint powder
Chicken tandoori masala
Black pepper powder
2tbsp extra virgin olive oil
Lemon juice 2tsp
For roti I have used our daily dough of atta.
Marinate the chicken with all the ingredients for at least an hour, more if possible. If marinating for more than one hour then add lemon an hour before the actual cooking of the chicken.
Now take a grill pan and place the chicken breast on it. Cook for about 4 min each side until cooked.
The cooking time may vary according to the size of your chicken.
Prepare the relish by adding all ingredients together. Stir well in intervals.
For garlic sauce add all the ingredients and whisk until smooth.
Now for final assembly make roti a little bigger and longer than you usually make.
Spread garlic sauce first, then hummus, then relish, then lettuce& lastly grilled chicken. Fold from down first and then wrap from both sides one by one and you form a pocket. Take a butter paper or a tissue and wrap it tightly.
