Baked Pizza Cups | Phyllo Pastry Veggie Cups

These cute little baked pizza cups are easy to make and a great appetizer. I like to make them when I want to fancy things up yet do least of the actual work. Its just phyllo pastry wrapped up with lots of veggies and pizza sauce and no cheese. Sorry no cheese this time it will be a possibility next time. So as you are reading the recipe and figure you have everything you need to bake these then go on and put your oven on pre heat.

Baked-Pizza-Cups

These cups are so crispy and yummy. Best part I could eat them guilt free as they are baked. They certainly are cute; I am just in awe of them. For filling I have used paneer (that’s why I skipped cheese) and some onion, capsicum. Such simple, isn’t it!!!

Ingredients:

1/2 cup Paneer/ Cottage Cheese(Learn to make your own)

6 Tbsp of pizza Sauce(Make your own & Store)

3 tbsp finely chopped capsicum

1 medium onion finely chopped

Salt & pepper as per taste

6 Phyllo pastry sheets/ spring roll sheets cut in 4 halves

Olive oil for brushing

Method:

In a pan heat 1 tbsp oil. Saute onions till soft.

Now add capsicum, salt & pepper.

Add crumbled paneer. Keep Aside.

Take a muffin pan. Brush little oil in the cavity. Now arrange 4 halves overlapping each other crating a pattern. Its OK for sides to come up.

Now spoon in the pizza sauce on the bottom and the edges. Put 1 tbsp of paneer filling. Do not over fill.

If you like you can top with cheese.

Bake at 200C for 5-7 mins or until golden.

Enjoy with hot garlic sauce.
