Its a quintsessential Mumbai snack.
Sev Puri is a papri(deep fried flat shorty bread) topped with potato’s and sauces.
Its just amazing. When I came to mumbai and the first time I had sev puri; I just fell in love with it. One big mouthful and you are in a different place. Its spicy, sweet, chunky all at once.
This is so much different than the chat you get in north. Ofcource this is my version and it can be made many versions if it. So lets start with how I like to make it.
Directions to make sev puri-

Mash the potato’s with onion and tomato’s. Add salt and mix well.
Now spread the papri onto a plate.
Carefully put about a teaspoon of patoato mix onto papri.
Now add little green chutney and top with imli chutney.
Sprinkle sev and garnish with coriander.
Serve immediately.
