I had boiled chickpea for hummus but could not make it. So decided to make a quick snack of it.
It’s light, refreshing and filling. I have used mayonnaise since I had no hung curd. But you can use yogurt for a more healthier option.
Enjoy it with a glass of fresh mint lemonade. Just yum!!
1 cup chickpeas boiled
1 cup veggie(finely chopped onion, tomatoes, red & yellow bell pepper, carrots, cucumber)
1/4 cup shredded lettuce
1 tbsp finely chopped fresh coriander leaves
2 tbsp mayonnaise
Salt and pepper to taste
Mix all the ingredients. Check for seasoning.
Serve and enjoy!!
