Corn cucumber and pomegranate salad is a delicious salad I like to make in summers.
All those bright colors looks so inviting in a bowl. But there are a lot of things in this salad that are not obviously visible but are added for an interesting twist.
How many times we hear that “you eat with your eyes” So this one is definitely pleasing to the eye. My mouth is drooling even as I am writing this post.
Directions to make Corn Cucumber And Pomegranate Salad-
Ingredients:
1/2 cup corn kernels
1 cup cucumber
1/2 cup pomegranate
1 small onion chopped roughly
1 small carrot chopped roughly
2 tbsp chopped raw mango
1 tbsp fresh red chilli finely chopped
1 lemon
Salt & Chaat masala as per taste
Method:
Boil the corn in 2 cup water and some salt. Drain and keep aside.
Chop all the ingredients one by one.
In a bowl add the chopped salad ingredients- corn, cucumber, onion, carrot, pomegranate, chilli, raw mango. Mix well.
I like to eat directly as it makes a good crunchy salad.
However you can add lemon juice, salt and chaat masala.
Enjoy!
Make sure you add the masala and lemon juice when you are ready to serve as all the salad with start leaving water after this.
