Sprouts & Potato Ande Ki Bhurji | Scrambled Egg-Indian Style

Eggs are a powerhouse of protein and a best first meal of the day. I love our Indian style scrambled egg for breakfast aka. bhurji with bread. And so do a lot of us. So how can you take it a step forward and make it extra nutritious and filling? Here I have added sprouts and boiled potatoes which give it an extra kick of protein and carbohydrates.

My family gets bored with the same breakfast; does that happen to you too? Do you need new breakfast ideas almost everyday. Here are some ideas-

I also like to eat fruits as part of my breakfast as they provide full fiber nutrition. Do leave in comments if you add anything unique in your eggs. I would love to know.

Ingredients:

4 Eggs

1 Large onion roughly chopped

3/4 cup sprouts parboiled and drained

1/2 cup hard boiled potatoes

Salt & Pepper as per taste

1/4 tsp turmeric powder

Method:

In a nonstick pan heat 2 tbsp Olive oil. Add onions. Saute till translucent.

Add in the spouts and potato. Cook for about a minitue.

Add salt, pepper and turmeric powder.

Now finally add in the eggs one by one.

Cook on low heat scrapping the sides and bottom until cooked all the way through.

Enjoy with bread and some fruits on the side.

PS.

You can also add tomato if you like.

Adding a little milk and garlic powder will enhance the flavors and can also be served at lunch time.

Its important to add hard boiled potatoes so that they retain their shape while cooking.
