For the guest post she made these gorgeous and flaky pastry/turnovers filled potato and corn. A great snack for the season as corn is everywhere, why not snack on it.

Beetroot & Potato Croquettes

Let’s see how it’s made.
Yield 2-3
Ingredients:
For the stuffing-
2 boiled & cubed potatoes
1/2 cup steamed sweet corn
Salt & pepper to taste
1/2 tsp red chili flakes
2 tbsp chopped black olives
3 tbsp mayonnaise (I’ve used eggless)
Method-
Mix all the above ingredients together and set them aside.
For the pie crust-
3/4 cup maida
5 tbsp of chilled butter
4-5 tbsp cold water
A pinch of salt
Method-
Add cubed butter into the flour, add salt. Rub the butter into the flour with your fingertips.
Once the flour looks like bread crumbs, add 2 tbsp of chilled water and try to bring the dough together.
Add more water if necessary and make a stiff dough.
Cover the dough with a damp kitchen towel and let it rest in the refrigerator for 30 mins.
Assembling-
Divide the dough in 2-3 equal parts.
Dust them with some flour and roll them out to a diameter of 6″-7″.
Spread the filling on to one side, flip over the other side on the filling and seal the edges using a fork.
Prick the pie a couple of times for the steam to have room to let itself out as these will bake.
Preheat the oven @180’c.
Brush the pies with milk. Bake them @180’c for 30 mins or so. Every oven works differently so please keep an eye on them after the first 20 mins. Adjust the temperature as per your oven too.
Once baked, serve them hot with some ketchup or any dip of your choice.
