Shakshuka – Baked Eggs in Tomato Sauce Recipe

Shakshuka or baked Eggs in tomato sauce is a popular middle eastern recipe. Very famous and so so delicious.

You do need some bread to wipe up that beautiful yummy sauce.

So by default I have indian-ised this recipe so that you can make this easily. There can be many variations or changes that you can make to this recipe. Will talk about them after.

Directions to make Shakshuka Baked Eggs-

Ingredients

3-4 eggs

2 large onions finely chopped

2 tbsp chopped garlic

1 tbsp chopped ginger

Green chillies as per taste (optional)

1 cup finely chopped tomatoes

1 cup purees tomatoes

Salt & pepper as per taste

Little turmeric powder

1 tbsp kashmiri chilli powder

1/2 tsp garam masala

3 tbsp ketchup/ pasta sauce

Method-

Start with a wide pan with a heavy bottom. Heat some olive oil. Around 1/4 cup.

Now add garlic and cook for some time. Do nit let it color or burn. It should just flavor the oil.

Now add chopped onions and ginger paste.

Saute the onions till they are brown.

Now add both chopped and pureed tomato. Cook untill they are soft and cooked.

Now add all the masala and ketchup.

Now spread the masala evenly like a layer.

Make holes for the eggs. So if you have 3 eggs make 3 big enough holes for the egg.

Now directly drop the egg in that hole. To avoid any mishap of breaking the yolk just crack the egg in a katori. Now gently drop it in the hole. Here it’s important that the yolk falls in the hold. The white will most likely spread over.

Now cover and cook on the lowest heat possible till the egg cooks.

You can sprinkle the top with lots of coriander, salt, pepper or some chilli to flavor the eggs.

Also traditionally feta cheese or any other soft cheese can be added.

You can also tear some cheese slices on top.

Serve with crisp bread.
